Know your sushi

Here at You Me Sushi we’re passionate about Japanese cuisine, and we know that you are too. But, we also know that it can be a slightly difficult concept for the uninitiated – with so many different styles and mouthful-sized morsels it can be difficult to know where to begin, so we thought we’d put together a quick guide to the different types of sushi so you know exactly what you’re being presented with.

HOSOMAKI

One of the most instantly-recognisable styles (and one you’ll see a lot in supermarket platters), hosomaki is composed of seafood and/or vegetables surrounded by sushi rice and wrapped in nori seaweed, creating a cigar-like tube of deliciousness.

NIGIRI

In Japan it’s all about nigiri, and it isn’t hard to see why. It’s composed of expertly-steamed sticky rice which is carefully moulded and topped with your choice of seafood, and as with all types of sushi only the freshest ingredients will do.

FUTOMAKI

The older brother of hosomaki, these are otherwise known as “thick” or “fat” sushi rolls that can be at least double the diameter of usual maki. They can be stuffed with a whole range of fillings (salmon and avocado, cucumber and Japanese omelette are all popular choices) and are rolled to create a substantial bite.

URAMAKI

These “inside-out rolls” have the sushi rice surrounding the seaweed for a different take on traditional sushi. Again, there are a huge range of different fillings on offer, with the likes of California rolls (crab meat and avocado) and shredded duck and cucumber being particularly popular.

INARI

Simple, deep fried tofu pouches filled with sushi rice, named after Inari – the Japanese fox god.

GUNKAN MAKI

These cups of seaweed and sushi rice are filled with the freshest seafood possible, with fish eggs and sea urchin being popular choices. You won’t find these at the supermarket very often, and they’re worth making a trip to the restaurant for (or getting them delivered to your home…).

TEMAKI

Temaki literally means hand rolls, meaning they’re rolled by hand without using a sushi mat. These savoury cones of nori seaweed are filled with sushi rice, vegetables and seafood in a range of combinations, and given the lovingly hand-crafted nature of them they’re designed to be eaten fresh before the nori wrapper has a chance to wilt.

TEMARI

A growing trend in the London sushi scene, these little balls of sushi rice are joined by seafood and vegetables in a variety of combinations.
